piNk LemOnAde CupCakes!!

They’re baack! And they’re still supa dupa delish. I have missed my pink lemonade cupcakes. Summer is the perfect time to bust these bad boys out. I had to go back to my old blog to dig them up, and I stole this pic from Her stuff looks crazy delicious! I originally got this recipe from Betty Crocker (I believe), and it’s always a favorite at any summer get together! And we all want to be the favorite at any summer get together.

1 package white cake mix (not the pudding kind)
3 egg whites
1 cup water
1/3 cup plus 1/4 cup frozen pink lemonade, thawed, divided
2 tablespoons vegetable oil
5 to 8 drops red food coloring
4 cups sifted powdered sugar
1/3 cup butter, softened
Lemon slice candies

preheat to 350
Beat cake mix, egg whites, water 1/3 cup concentrate, oil and 4 to 6 drops food coloring.
Spoon into cupcake cups.
Bake 18 to 20 minutes of until toothpick comes out clean. Cool for five minutes, remove and let finish cooling.
Beat powdered sugar, butter and remaining 1/4 cup concentrate in medium bowl with electric mixer at medium speed. Beat in remaining food coloring.
Spread frosting over cupcakes. Garnish with candies and straws (that makes it way cute) if desired.

    Annonymous- the pink lemonade flavor is really strong, I don't think you need the added lemon cake mix. Plus white is always more moist, I think.
    Darlene- You can do two-colored icing by just putting two colors into your icing bag side by side.
    Jamie-I've tried limeade instead of pink lemonade, and it just wasn't quite the same. There's something amazing about the tartnesss of the pink lemonade frosting. But if you try it, let me know!

  • this recipe showed up on facebook via betty crocker so I gave it a try this evening and we love it! My boys and husband who doesn't care for cake love them. Thanks for sharing this, can't wait to try it out during the 4th of July!

  • I just made these and they're very good. I had a lot of frosting left over, though. Since the frosting is very sweet, next time I make them I will cut the frosting recipe in half and put just a thin layer on each cupcake.

  • I got your recipe from betty crocker via facebook as well and I just made them, with a few modifications (I used strawberry cake mix instead of white and had to add a bit more powdered sugar to my icing to make it more firm) But they are absolutely delicious! My 2 year old cant get enough of them and she is not a cake fan. Thank you so much for sharing. Alot of my fb friends have asked for the recipe as well and I passed it on more than a few times.

  • Wondering… what happens if you use the cake mix with the pudding inside of it? Does it change the cupcakes at all?

  • These were delicious! I updated the recipe a little to make it a bit more adult- I added a bit of citrus vodka to the icing and it was a hit! Definitely a great addition to any adult pool party! Thanks!

    Juicyy4- I'm not sure about the pudding mix? It was just how the recipe read. I actually think I've used pudding mixes before? I guess I'm not much help..

  • All my cake mixes state they have pudding in the mix. Can you get them without any more?

  • I actuallythink you're fine to use the pudding mix. I'm not sure why the recipe says not to but I'm 90% sure I have used pudding mix.
